Happy New Year!
Enjoy your meatless Mondays with these mock meatballs made with red quinoa (pronounce keen-wah) and brown lentils. Quinoa's color can be red, tan, or black and when cooked it has a mildly nutty flavor. It is a complete protein and is high in B vitamins and minerals like magnesium, folate, zinc, phosphorus, and iron. Lentils are versatile legumes and are rich in protein, fiber, and potassium. Instead of eggs, I used moistened ground flax seeds to bind these meatballs together and to make a completely animal free meal.
Preheat the oven to 375 degrees F.
Ingredients & Procedure
1 large onion, minced
4 stalks organic celery, minced
1 T. grapeseed oil or olive oil
In a large pan, saute the onion and celery until lightly browned (about 10 minutes). Set aside to cool.
1 1/4 cup red quinoa (any color will do)
1 1/4 brown lentils
4 cups water
8 oz. can tomato sauce
Combine the quinoa and lentils in a large pot. Rinse these ingredients well. Then, add 4 cups of water and tomato sauce, cover the pot, and bring to a boil. Turn the flame down and simmer for 15 minutes covered. Turn the stove off and allow to cool.
2 T. ground flax seeds (grind them as you need them in a coffee grinder)
1/2 cup water
1 tsp. oregano
1 tsp. crushed red pepper flakes
4 cubes of frozen parsley (fresh or dried is fine, too)
a pinch of sea salt
freshly ground pepper, to taste
In a small bowl, stir the ground flax seeds with water. Add all of your spices. Feel free to use any herbs and spices you love. The mixture will be a little gooey.
Afterwards, combine the onions & celery and the flax & spice mixture into the quinoa & lentil pot.
Add 1/2 cup breadcrumbs. Stir well.
Finally, use a 1/3 cup measuring scoop to form meatballs. Place on greased tray (use grapeseed or olive oil). Bake for 20 minutes, or until crispy golden on the top. Recipe makes 21 "meatballs".

Spaghetti and "Meatballs": Cut a spaghetti squash lengthwise, wrap each half in tin foil, and bake for 45 minutes. The scooped flesh will be stringy like actual spaghetti. Top with "meatballs" and enjoy with your favorite tomato sauce.
"Meatball" Hero: Slice a baguette down the middle, spread tomato paste on both halves, place 3 "meatballs" inside, top with cashew & nutritional yeast cheese, some more tomato sauce, and sprouts.
